A really safe way of doing it when you know you need to is saving Curse-Rotted Greatwood or Old Demon King until sending him out, then going back. However, a boss needs to die in your world in a certain amount of time after sending Greirat or he dies. If Siegward is still there, you're good to send Greirat.

I don't believe so, I saved greirat in irithyll using siegward and not patches. Patches will be back after you kill a boss. Patches will leave after you tell him that Greirat went to Lothric but he will not be able to save Greirat. You can’t save him on the third outing if you sent him to Lothric Castle iirc.
